Step 1

In a pan, fry walnut flour for a bit, without using oil. Add softened butter, erythritol powder and hot milk and combine everything into a uniform mixture. Place on a baking tray measuring 20 x 20 cm.

For the chocolate layer, separate the yolks from the whites. Add erythritol powder to the yolks and mix until frothy. Meanwhile, melt the chocolate and let it cool and then add two tablespoons of rum, cocoa powder and melted chocolate to the eggs. Stir gently with a spatula. Finally, mix the egg whites and carefully add them to the mass.

Pour the chocolate mixture over the walnut layer and bake at 180°C for about 25 minutes.

Step 2

Remove from oven and let to cool.

Meanwhile, melt the remaining 30 g of chocolate and mix it with 80 g of mascarpone cheese. Cut the baked buiscuit into cubes and sprinkle them with mascarpone cream. Garnish with walnut kernels.
