We love muffins! Pumpkin muffins are a great addition to everyday meals when you don't want to reach for bread or you just want a nice change in the menu.

First and only step

Combine psyllium husk with water and leave to soak for about 10 minutes.

In another bowl, mix all the dry ingredients and after ten minutes add the soaked psyllium husk. Add another 250 ml of water and mix well.

Pour the mixture into silicone molds or a muffin tin and bake for 20 minutes at 200°C.
